Sally and the kids are visiting today so I was up and about early this morning baking these cupcakes to have after lunch. The cakes are vanilla with just a touch of lemon zest and they're filled with zingy lemon curd. I've topped them with delicious lemon cream cheese frosting and decorated them with little lemon jelly slices. Citrustastic!
The lemon slices are really old school cake decorations. They come in a tub of orange and lemon ones mixed together. Fun though!
As for the icing, I put a heaped teaspoon onto each cake and then gently smooth it out with the back of the spoon in a roundy-round motion. I don't spread it to the edges - gravity kind of takes over and the icing finds its own level and smooths itself out.
oh they are yum, I want some next time I come over... I know how she does the icing Lori, just like she does the crazy precision stringer work, very very calmly and with patience...I love all the lemon...
Mmmmmmmmmm I could just eat one of those.
