I took a day off from beadmaking and this morning I did a spot breadmaking instead. I've been meaning to do so ever since I watched the bread episode of The Great British Bake Off a couple of weeks ago.
It's just a plain white loaf and the recipe I used was fantastic! It was a BBC Good Food one and can be found here. It's definitely the best loaf of bread I've ever baked and we'll be having it (well, what's left of it) with soup for dinner tonight.
After reading all of the helpful comments on the recipe page I put in slightly less salt than recommended and I also used 150ml of boiling water mixed with 150ml of fridge-cold milk. That made a nice tepid liquid for the yeast. I also reduced the oven temperature and increased the cooking time. The loaf is soft, fluffy and has a nice crisp crust. Delicious!
I can't speak highly enough of the bread recipe - it'll definitely be my go-to one from now on.

ReplyDeleteThat looks yum! I wouldn't be without my Kenwood breadmaker, I make 2-3 loaves a week with it, I hardly ever resort to shop bought any more. I'll definitely give this recipe a go but like yourself, I'll have to cut down on the salt due to my husband's high blood pressure.

ReplyDeleteSue - I halved the salt as I just don't eat a lot of the stuff. In the comments for the recipe there are many suggestions for adjusting it for wholemeal, adding seeds and nuts and so on.

That loaf looks rather tasty, Laura. I'm a bit useless when it comes to these things, and resort to the bread machine when I want some bread. When I'm feeling better, I might just test that recipe. Thanks for sharing! x

ReplyDeletethat's a nice-looking loaf laura :) would it get the GBBO seal of approval?! sounds like it was a winner to me. i'm enjoying the prog too. don't think they'd think too highly of my baking efforts though :P
