Lemon Meringue Loveliness

Lemon Meringue CupcakeToday Jelveh is coming over to make beads and she requested some cupcakes like the ones I made the other day. However, I went to my baking cupboard this morning and discovered I was out of icing sugar for the cream cheese frosting so I had to change my recipe plans and I ended up making lemon meringue cupcakes instead. These lemon cakes are filled with tangy lemon curd and topped with light meringue. Yummayumma!

  6. ok, so I get to Laura's place and she has made me these lovely lovely cupcakes...I just could not believe how lovely they looked, then I took a bite, oh my gosh, the girl's real cupcakes are just as yummy as her glass cupcakes...not only the top has the meringue, but there is this yummy lemon filling, I was in heaven...and consider myself a very lucky girl to known such a great person who lets me come over, make beads in her studio and feeds me yummy cupcakes made by her on the same...life is indeed good...& I am thankful...
